Superbowl Potato Salad with Fakin Bacon Crutons

30 red potatoes, boiled and quartered

6 tbsp fresh dill chopped

4 Sour pickled cucumbers, cubed

¼ cup low fat Mayonnaise

1 red onion, diced

Salt and pepper to taste

2 packages Fakin Bacon by Jacks Gourmet Kosher Sausages (fried up as per directions on back of package), diced up when cooked


Once potatoes are fork tender, drain and quarter.  While potatoes are still very warm add seasoning, and the rest of the ingredients.

Mix all ingredients together in a bowl.  Toss in Fakin on top and mix gently again.

Serve and enjoy
